James Beard Award Winning chef Gerard Craft launches Dia’s Room: An intimate 10 seat dining experience that pays homage to his late childhood nanny, Cecelia Assuncao (fondly known as “Dia”) and channels off-menu creativity for the Cinder House culinary team.
Diners that are able to secure one of the highly coveted seats, will enter the newly reimagined room through the exterior of Cinder House, a discrete side entrance on the 8th floor Sky Terrace.
Blackend-blue walls, a handcrafted table by local wood worker David Stine and mid-century modern chairs set the stage for an intimate dining experience.
Guests can expect to enjoy 13 whimsical and modern courses that begin with Dia’s famous cheese bread (Pao de Queio) and progress to Niche inspired courses with a Brazilian twist. Thai finger bananas adorned with Missouri Paddlefish Caviar, Cachaca fosters glaze, crème fraiche will grace the menu; along with Bacalao Lattice, Scallop Pirao, Fluke Crudo and Foiejoada.
Cost is $125 per person, excluding tax and gratuity. Wine pairings will be offered for an additional charge, as well as access to the full wine and spirit list.
